Home-made Barbecue Sauce

The scarcity and high price of condiments and sauces here in Portugal led me to attempt this recipe for BBQ sauce last week. It was worth every second of the preparation and so tasty that my wife had to stop me eating it straight from the bowl with a spoon!

Most, if not all, of the ingredients are store-cupboard items, so it is very cheap to make, and I can assure you that it is better than anything you will find in a jar (with the possible exception of the wonderful Reggae Reggae sauce which gets brought back with us every time we visit the UK.) This sauce works very well as a dipping sauce or a marinade. We brushed it onto pork ribs as they cooked on the BBQ.

YOU NEED:

2 tbsp Olive Oil

1 x Large onion

2 x crushed cloves of garlic

1 x 400g tin plum tomatoes

2 tbsp Worcester sauce (see below.)

1 tbsp white wine vinegar

3 tbsp clear honey

1 tsp mustard powder

1 tsp dry piri piri / chilli powder

Salt and pepper

(In place of the Worcester sauce, we used “Molho Ingles,” which is widely available here in Portugal and seems to be much the same.)

Fry the onions at a low heat in the oil until soft, towards the end add the garlic. Stir in everything else and simmer and reduce, stirring from time to time for 20 mins (with lid off.) Allow to cool and then put the whole lot in a food processor or blender until smooth. Finally, push the whole mixture through a sieve to end up with a lovely consistency.
